Avocado Lime No Bake Cheesecake

This creamy dessert has a thick cookie base and a refreshing lime zest. Easy to make.

1. Gather and prepare ingredients
- Zest and juice lime
- Peel, remove seed and chop avocado into 1 inch pieces.

2. Make Crust
- Grease a 9" springform pan
- Mix graham crumbs, brown sugar and cinnamon in a bowl.
- Make a well in the middle and pour in melted butter
- Mix well
- Press firmly into the bottom of springform pan.
- Place pan in freezer to set until filling is done.

3. Make Filling
- In an electric mixer beat together sugar, avacado, cream cheese, sour cream, lime juice, lime zest. Beat until smooth.
- Transfer avocado mixture into a large bowl and clean mixer bowl.
- Add packet of gelatin to avacado mixure, stir in and set aside.
- Chill mixer bowl by rinsing in very cold water. Dry bowl.
- Add whipping cream and icing suger.
- Whip on high speed until stiff peaks form.
- Gently fold whipped cream into avacado mixture to preserve volume. Keep folding until well blended.
- Add filling over crust in Spring form pan and refrigerate for at least 2 hours.
- Run knife around edges of springform pan before removing pan from the cheesecake.
