Description

This creamy dessert has a thick cookie base and a refreshing lime zest. Easy to make.

Method

  1. 1. Gather and prepare ingredients
    1. Zest and juice lime
    2. Peel, remove seed and chop avocado into 1 inch pieces.
  1. 2. Make Crust
    1. Grease a 9" springform pan
    2. Mix graham crumbs, brown sugar and cinnamon in a bowl.
    3. Make a well in the middle and pour in melted butter
    4. Mix well
    5. Press firmly into the bottom of springform pan.
    6. Place pan in freezer to set until filling is done.
  1. 3. Make Filling
    1. In an electric mixer beat together sugar, avacado, cream cheese, sour cream, lime juice, lime zest. Beat until smooth.
    2. Transfer avocado mixture into a large bowl and clean mixer bowl.
    3. Add packet of gelatin to avacado mixure, stir in and set aside.
    4. Chill mixer bowl by rinsing in very cold water. Dry bowl.
    5. Add whipping cream and icing suger.
    6. Whip on high speed until stiff peaks form.
    7. Gently fold whipped cream into avacado mixture to preserve volume. Keep folding until well blended.
    8. Add filling over crust in Spring form pan and refrigerate for at least 2 hours.
    9. Run knife around edges of springform pan before removing pan from the cheesecake.
